Kitchen Manager

The Kitchen Manager at TolHouse is responsible for managing all kitchen staff, optimizing and streamlining procedures and food prep, and managing inventory. The Kitchen Manager ensures that each cook performs their job according to the Chef’s specifications. This includes checking food temperatures, observing proper plating, and jumping in to prep or cook when necessary. This person must know how to recruit, interview, hire, and train great kitchen staff. Works to ensure that safety procedures are trained and upheld, and that only the finest dishes are delivered from our kitchen.

This could be a full-time or part-time position. The right candidate could hold a role elsewhere, if they desire to do this part-time.

Members of the TolHouse team are key to maintaining the appearance, atmosphere, and sensibilities of the club.

Requires ServSafe Manager Certification, at least two years of management/leadership experience in a fast-paced kitchen. Requires excellent communication and documentation skills, and a displayed ability to develop and lead a team.

Direct Responsibilities (Summary)

  • In charge of food costs and optimizing the inventory, seeks out the best ingredients, throws away old food, submits requests for repair or new equipment and utensils
  • Places timely inventory orders and checks every delivery. Serves as kitchen curator, constantly fine-tuning the physical inventory.
  • Hiring new staff and providing training to facilitate quick acclimation
  • Streamlining the kitchen processes to maintain prompt service times
  • Cooks food items by grilling, frying, sautéing, and other cooking methods to specified recipes and standards when necessary
  • Setting regular cleaning standards for the kitchen and verifying that staff is maintaining sanitation levels
  • Creating schedules for all kitchen staff
  • Tracking kitchen finances to identify areas of potential waste
  • Other duties as assigned

Qualifications

  • Previous experience in a kitchen management/leadership position
  • ServSafe Manager Certified (required)
  • Excellent communicator with a demonstrated ability to lead
  • Detail oriented, articulate and ability to multitask in a demanding work environment
  • Flexible availability
